Yellow Cucumber Dal
Ingredients:
Serves 2-3 1/2 cup Toor Dal / Split Pigeon Peas
1 cup Water 1 medium Yellow Cucumber, cubed 1/2 teaspoon Mustard Seeds 1/2 teaspoon Cumin 1/4 teaspoon Asafoetida / Hing 1/4 teaspoon Tamarind Extract 4-5 Curry Leaves 1 Red Chilli 1 Green Chilli 1 tablespoon Oil Salt, to taste Instructions:
Pressure cook toor dal and cucumber together with 1 cup of water. Set aside.
In a pan, heat oil on a medium flame and add mustard seeds. When the mustard seeds pop, add cumin, asafoetida, curry leaves, tamarind extract, red chilli and green chilli. Stir for a couple of minutes. Pour in cooked toor dal. Add salt as per taste. Let the Dal simmer for 5 minutes on a low flame and turn off the flame. If dal is drying up, add a bit of water. |
